Since my last pr got out of scope I've created this one for just the image optimizations

  • Converted img tags to the new picture tag
  • Fixed issues with the layout after introducing correct width and height to images

Uses this awesome gem jekyll_picture_tag

The PR is very outdated now. Closing with the seam reasoning as the other PRs that were made during this time.
