I have some projects inside containers with their own copies of MailCatcher and sometimes I have more than one open, so it would be useful to have a --title option.

So --title XYZ would change the <title> to "XYZ" and also change the heading on the page to "MailCatcher: XYZ" or something like that. Then I could quickly jump to the right one.
