Odd/inconsistent bullet styles when using Claude 3 Sonnet and the conversational API

Found while testing #37575

Steps to Reproduce

1. install 1.67.85
2. launch Brave using --enable-features=AIChat:conversation_api\/true
3. switch to Claude 3 Sonnet (you'll have to go Premium first)
4. load https://www.polygon.com/24158477/shogun-season-2-renewal-what-about-how
5. click on Summarize this page
6. examine the bulleted-list formatting

Actual result:

Expected result:

Reproduces how often:

30-60% of the time? 🤷

FWIW, I don't seem to see this (as often?) using Claude 3 Haiku - is it on a different config/path?

Another example, where it becomes Mixtral-like in its predilection for emojis
